First, let’s answer the question, “what is this stuff?”. Many people are familiar with RumChata, but not everyone knows there is more than one variety of the famously delicious and smooth cream liqueur. 

In addition to the original RumChata, there’s also a Lemon version called Rumchata Limón, along with a RumChata Peppermint Bark, which is perfect for the holidays. The version we’re focusing on today is creamy with a bright and fresh lemon finish.

The original recipe also doesn’t call for Rumchata Limón, but we made a couple of substitutions for this drink recipe. We replaced the vodka in this recipe with 2-parts Rumchata Limón to one part vodka. Fill your glass and garnish with lemon or raspberry before serving. You can also enjoy drinking this one with a little plate of lemon cookies for a light dessert.
